Last year, while consolidating our honey I noticed the different types did not mix as I assumed they would. What it created was a beautifully jar of layered honey! You can turn it upside down and the light honey will slowly go to the bottom, with summer in the middle, and late summer always on top. Honey never fails to amaze us!
Location of hive: Billerica, MA
Because the honey is raw and unfiltered, it may crystalize quickly. This honey can be uncrystallized by soaking in a warm water bath of 115 degrees Celsius until liquid again.
